Apple Sage Pork Skillet

Pork and apples together are always a classic! Pork tenderloin medallions in a one skillet meal makes for a healthy and hearty dinner perfect for those nights when you just want something quick. Serve this delicious meal up over mashed potatoes or rice with a side of green beans.

Ingredients

1 lb pork tenderloin, approx. 1 tenderloin (500 g)
1/2 tsp each salt and pepper, divided (2 mL)
2 tbsp flour (30 mL)
1 tsp ground sage (5 mL)
1 clove garlic, minced
½ tsp ground thyme (2 mL)
1 tsp vegetable oil (5 mL)
1 medium onion, thinly sliced
4 cups thinly sliced Ontario apples* (1 L)
1/2 cup sodium reduced chicken broth (125 mL)

Directions

Preheat oven to 400°F (200°C). Slice pork tenderloin into 4 equal sized pieces. Season pork medallions with 1/4 tsp (1 mL) each salt and pepper. In a large bowl, mix together flour, remaining salt and pepper, sage, garlic and thyme together in a small bowl. Rub the flour mixture over the pork tenderloin pieces.

 

Heat oil in a large skillet over medium-high heat. Brown tenderloin medallions on all sides, around 4 minutes. Set tenderloin medallions aside on a plate.

 

In the same skillet, heat oil over medium heat. Stir in onions and apples and cook for 5 minutes, or until apples are tender. In a small bowl, whisk together chicken broth and remaining flour mixture. Add the broth/flour slurry to the pan and cook for 30 seconds or until sauce is thickened. Add tenderloin medallions back into the pan and cook in the oven for 15 minutes. Serve with your favourite sides.
