Apple and Sausage Farro Risotto

Apples, sausage and a hearty grain- this is a one pot dinner that has it all! The savory notes of the broth are complimented by the sweet tang of apples. This meal is incredibly high in fibre and protein for a satisfying meal that will help keep you feeling fuller for longer.

Ingredients

1 lb turkey sausage (500 g)
2 Ontario apples*, diced
1 small onion, diced
1/4 tsp black pepper (1 mL)
2 cloves garlic, minced
1 tsp each dried rosemary and dried thyme (5 mL)
1 cup farro (250 mL)
3 cups sodium reduced chicken broth (750 mL)
1/4 cup chopped fresh parsley (60 mL)

Directions

Remove sausage meat from casing. In a large pot over medium heat, stir in sausage and cook, breaking apart, until browned and crumbly, 7  minutes. Set aside on a plate. Cook apples for 2 minutes and set aside on the same plate as the turkey.

 

In that same pot over medium heat stir in onions, pepper, garlic, rosemary and thyme. Cook for 3 minutes. Stir in farro and cook for 1 minutes.

 

Stir in broth and bring to a boil. Reduce heat to medium-low, cover, and cook for 30 minutes or until the farro is tender. Remove lid and continue cooking for 5 minutes while stirring occasionally. Stir in sausage and apples and cook for 1 minute. Remove from heat and garnish with fresh parsley.
